Here’s the Recipe for Buffalo Chips!

Here’s our holiday gift for you, courtesy of the Lark Camp Bakery: the recipe for Buffalo Chips!
Buffalo Chips (makes 40)
Melt together in a double boiler and then let cool for 10 minutes:

  • 2 cups butter
  • 8 oz. unsweetened chocolate
  • 4 cups brown sugar

Beat into the above cooled mixture:

  • 4 eggs
  • 4 tsp vanilla
  • 2 cups buttermilk

In a separate bowl, mix dry ingredients together thoroughly, then stir into chocolate mixture:

  • 6 cups all-purpose flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt

Add 2 cups chocolate chips.

Use a large cookie scoop (3 tablespoons of dough) to measure onto a baking tray and bake for 10 minutes at 350 F.

Frosting: Using a mixer, whip butter till soft and fluffy; add dry ingredients a small amount at a time until combined; with mixer still running, add vanilla. Frost the cooled cookies.

  • 1 1/2 cups butter
  • 6 Tbsp cocoa powder
  • pinch of salt
  • 4 cups powdered sugar
  • 3 tsp vanilla
